Nigella’s Guinness Chocolate Cake

Kiss me, I’m Irish. 

If you ever wondered where the expression comes from, it has to do with the Blarney Stone. Legend has it that whoever kisses the Stone will be blessed with the gift of the gab. And since not everyone can trek to the castle for a quick peck, the next best thing would be to kiss an Irish person in hopes that they would have kissed the Stone. I guess the Stone’s gifts are transitive. 

This year for a St. Patrick’s Day treat, I wanted to try out Nigella’s Guinness Chocolate Cake. There’s a reason why this recipe is so popular. It wasn’t too chocolatey and had the right amount of moistness. For the frosting, I added five tablespoons of Bailey’s, cause why not? Next time, I think I’ll try adding espresso to the cake batter…and maybe some Jamieson as well.
