Mochi Waffles

Are you a breakfast person? I have a friend who absolutely detests breakfast food. I, on the other hand, love it. Breakfast for dinner? Great. Breakfast for breakfast? Also great. Breakfast for lunch? Um, isn’t that just brunch?

In all honesty, though, I generally keep my breakfast pretty simple.
It’s just basically eggs, oatmeal, etc. For some reason, waffles always seem like such an undertaking. Not necessarily fancy or anything, but it feels like something you need to put more effort into them. In reality, waffles are just as easy to make as scrambled eggs. I don’t know why I don’t make them more often.

The inspiration for these mochi waffles came by way of one of my favorite local mochi donut shops. I saw on Instagram, that they started selling mochi baking mix for pancakes and waffles. So naturally, I thought to myself “hey, I have mochi flour at home, I bet I can whip up a batch.

Course: Breakfast

Ingredients

  • ¾ cup milk
  • 1 egg
  • ½ teaspoon vanilla extract
  • cup sweet rice flour
  • ¼ cup sugar
  • ¼ teaspoon salt
  • teaspoon baking powder

Instructions

  • Whisk together milk, egg, and vanilla extract.
  • In a separate bowl, combine sweet rice flour, sugar, salt, and baking powder.
  • Add wet ingredients to dry and mix well.
  • Pour into a preheated waffle iron.
  • Top waffles with powdered sugar and/or fresh fruit.
