baked feta pasta (aka the TikTok pasta)

baked feta pasta (aka the TikTok pasta)

If you’ve been on TikTok recently, you’ve probably come across the viral baked feta pasta. I knew I had to jump on the trend that supposedly made Finland run of feta (although I’m assuming that’s a bit of an exaggeration). Luckily for me, Trader Joe’s wasn’t out of feta.

After making it, I can see why it was such a big hit. It’s super simple to make and the payoff is great. It’s very adaptable. The original recipe simply calls for tomatoes, feta, pasta, and basil, but zhuzhed it up a bit with garlic, mushroom, red onions, breadcrumbs, etc.

Have you tried the baked feta past yet? What did you think?

baked feta pasta

Materials

  • 2 pints cherry tomatoes
  • 1 head red onion
  • 2 cups mushrooms
  • 1 block feta
  • 1 head garlic peeled
  • 1 fresno pepper sliced into discs
  • red pepper flakes
  • dried oregano
  • umami seasoning
  • honey
  • 8 ounces pasta
  • breadcrumbs
  • parmesan
  • cup basil thinly sliced

Instructions

  • Preheat oven to 400°.
  • Drizzle a bit of olive oil into a baking dish. Add tomatoes, red onions, mushrooms, Fresno pepper, and garlic.
  • Place a block of feta in the middle.
  • Add another drizzle of olive oil.
  • Season with a sprinkling of dried oregano, umami seasoning, red pepper flakes, salt, and pepper to taste.
  • Add a bit of honey.
  • Roast for 40 mins.
  • A little bit before the tomatoes and feta are done, cook your pasta of choice to al dente, reserving 1 cup of pasta water.
  • Take the baking dish out and mix well, smashing the feta and garlic. Add pasta and basil (and if necessary, the pasta water). Toss so that everything is well incorporated.
  • Sprinkle bread crumbs and grated parmesan on top of the dish and broil for 10 minutes.
  • Plate the pasta and garnish with basil and another dusting of parmesan.
